White Chocolate Macadamia Nut Cookies (Toddler chef-friendly)
Our (huge) family goes crazy over our white chocolate macadamia nut cookies every year, so we this year, we thought we'd make some for Santa and his crew too!
YIELD: 40-48 cookies
PREP TIME: 15 minutes
COOK TIME: 8-12 minutes
INGREDIENTS:
- 2 1/4 c. flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 c. butter, softened
- 3/4 cup sugar
- 3/4 cup firmly packed light brown sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 (12 oz.) pkg. white chocolate morsels
- 1 cup chopped macadamia nuts
- 1 teaspoon cinnamon
DIRECTIONS:
1. Preheat oven to 375 degrees (sometimes I cap it at 350, depending on the oven--try out a test batch to see which works best for you).
2. Combine flour, baking soda and salt and set the mixture aside.
3. Combine butter, sugars and vanilla and beat until creamy.
4. Beat in eggs.
5. Slowly add the flour mixture and mix well.
6. Add cinnamon.
7. Use a spatula or large spoon to stir in the white chocolate morsels and macadamia nuts.
8. Put the finished dough in the freezer for 15 minutes to let it harden a little.
9. Remove the dough from the freezer and use a teaspoon or 1/2 of a tablespoon to drop dough about two inches apart onto an ungreased cookie sheet.
9. Bake for 8-12 (usually about 10) minutes or until a nice golden brown around the edges. Don't let them burn!
10. Let cookies cool and firm up a bit before serving.
